This is my version of the ice box cake. Mangoes are in season here all year round, very cheap too. Try it by adding cream cheese for extra flavor! I love serving this semi-frozen. Very refreshing! Ingredients:
2 packs graham crackers |
2 lbs very ripe mangoes, sliced (use spoon to scoop out flesh) |
4 cups all-purpose cream |
2 cups condensed milk |
1 pack (8 oz) cream cheese (optional) |
Directions:
1. Use a deep rectangular plastic container. 2. If you're adding cream cheese to the recipe, use an electric mixer to soften it while gradually adding the all-purpose cream and condensed milk. 3. Line bottom of dish with graham crackers. 4. Top with sliced mangoes and cover with cream mixture. 5. Repeat layer by layer until there's a remaining half an inch allowance on top. 6. Decorate top with sliced mangoes and graham cracker crumbs. Best to freeze overnight. 7. Remove from freezer 30 minutes before serving. |
