Mango Colada Chicken With Ginger Fruit |

MMM-MMMMM-GOOOOOOOD!!!! Ingredients:
12 medium chicken thighs, skinned |
1 1/2 cups cubed under-ripe mangoes |
1/4 cup rum |
2 tablespoons sweetened coconut cream |
1/4 cup soy sauce |
1 teaspoon grated gingerroot |
1 teaspoon allspice |
curly lettuce leaf |
1 tablespoon toasted sesame seeds |
4 tablespoons sweetened coconut cream |
1/2 teaspoon grated gingerroot |
2 cups ripe mangoes, peeled and cubed |
1 pint strawberry, hulled |
2 cups red seedless grapes |
Directions:
1. For Chicken: Preheat oven to 400°F. 2. In a food processor, puree the mango. Add rum, coconut cream, soy sauce, gingerroot and allspice. 3. Coat chicken with mango puree mixture and place in a baking dish. 4. Bake, uncovered, for 50 minutes or until fork-tender, turning frequently. (Increase heat to reduce liquid if necessary toward the end of cooking.). 5. For Ginger Fruit:. 6. Mix ingredients together in a bowl and toss well. 7. To Serve:. 8. Line a round serving platter with lettuce leaves. Place the chicken in the center, sprinkle with sesame seed and arrange Ginger Fruit around chicken. |
