This is delicious on pork, chicken or in Indian curry dishes.
Ingredients:
3 1/4 cups mangoes, fresh, peeled and chopped into 1/2-inch cubes
2 1/2 cups white sugar
1 cup brown sugar, packed
1 cup apple cider vinegar
1/2 cup raisins
1/4 cup ginger, fresh grated
2 tablespoons garlic, minced
2 tablespoons salt
1 teaspoon ground cloves
1/2-1 teaspoon hot pepper, from a jar finely chopped
Directions:
1. Make sure mangos are not too ripe or soft. They're easier to peel.
2. Put into a large bowl; add sugars and stir well until sugars liquify. Cover and let set on counter overnight.
3. Pour into a large saucepan and add the rest of ingredients. Stir well. Bring to a boil, then reduce heat to a simmer. Let simmer, stirring occasionally, 45 minutes or longer, or until as thick as gravy. Pour into clean jars, (should make about 1 quart and a cup extra), and keep refrigerated. Will keep months.
