This is delicious on pork, chicken or in Indian curry dishes. Ingredients:
3 1/4 cups mangoes, fresh, peeled and chopped into 1/2-inch cubes |
2 1/2 cups white sugar |
1 cup brown sugar, packed |
1 cup apple cider vinegar |
1/2 cup raisins |
1/4 cup ginger, fresh grated |
2 tablespoons garlic, minced |
2 tablespoons salt |
1 teaspoon ground cloves |
1/2-1 teaspoon hot pepper, from a jar finely chopped |
Directions:
1. Make sure mangos are not too ripe or soft. They're easier to peel. 2. Put into a large bowl; add sugars and stir well until sugars liquify. Cover and let set on counter overnight. 3. Pour into a large saucepan and add the rest of ingredients. Stir well. Bring to a boil, then reduce heat to a simmer. Let simmer, stirring occasionally, 45 minutes or longer, or until as thick as gravy. Pour into clean jars, (should make about 1 quart and a cup extra), and keep refrigerated. Will keep months. |
