Use with grilled meat or fish. We enjoyed this with grilled shrimp kabobs. Kabobs were sprayed with vegetable oil spray and seasoned with salt and pepper, then splashed with fresh lemon juice just before serving. This was served with brown basmati rice, steamed broccolini and chopped fresh cucumber.
Ingredients:
1 1/2 cups mango, diced
2 medium onions, diced
1 red bell pepper, diced
2 tbsp chopped cilantro
1/4 cup lemon juice
1/4 tsp crushed red pepper
1/8 tsp black pepper
1/8 tsp lemon peel
Directions:
1. Spray pan with vegetable oil spray.
2. Add chopped onion and a dash of salt.
3. Saute about 4 minutes, then add chopped bell pepper. Continue cooking until onions are translucent and beginning to brown.
4. Remove from heat.
5. Add mango, fresh lemon juice (juice from 1/2 a lemon), lemon peel and chopped cilantro.
6. Toss and set aside for 5 minutes or longer before serving.
