An easy chutney to make in the microwave. Both sweet and spicy great with pork or chicken. Ingredients:
1 1/2 cups mangoes, chopped |
1/4 cup light brown sugar |
1/4 cup onion, finely chopped |
1/2 cup golden raisin |
2 tablespoons white vinegar |
1/2 teaspoon ginger, ground |
1/2 teaspoon dry mustard |
Directions:
1. Peel and seed the mangoes and cut into 1/2 inch cubes. 2. Combine with the other ingredients in a deep 2 quart microwave safe dish. Mix well. 3. Cook on high for 6 minutes. 4. Cool, cover and refridgerate. |
