Another great mango chutney recipe from Trinidad.............goes nicely with a curry.......or alternately with a cold meat platter. Ingredients:
12 ripe mangoes |
250 g raisins |
125 g green ginger |
1 large garlic clove |
125 g tamarind pulp |
250 g salt (or to taste) |
250 g sugar |
1 quart vinegar |
Directions:
1. Peel mangoes. 2. Cut flesh into strips. 3. finely chop OR pound garlic. 4. Peel & finely cut ginger. 5. Scrape tamarind & discard seeds ( if using fresh). 6. Mix all solid ingredients. 7. Boil vinegar. 8. Pour over the mixture & stir well. 9. When cool bottle & lable. |
