A mango chicken salad that can be used as a wrap filling! SO tasty!
Ingredients:
2 cooked chicken breast shredded
1/2 cup julienne jicima
1/2 cup julienne mango
juice of 2 limes
juice of 2 lemons
1 or 2 mint leaves
1 tablespoon soy sauce
1 tablespoon vegetable oil
1 tablespoon honey
salt and black pepper to taste
1 pound arugula
1/4 pound snow peas
(optional) tortillas or lavosh
Directions:
1. Combine all but chicken breast, arugula and snow peas
2. Reserving 1/4 cup of sauce, pour over chicken.
3. Combine arugula and snow peas and pour reserved 1/4 cup sauce over.
4. Combine salad and chicken. Chill.
5. Serve as salad or wrapped in tortilla or lavosh.
