A mango chicken salad that can be used as a wrap filling! SO tasty! Ingredients:
2 cooked chicken breast shredded |
1/2 cup julienne jicima |
1/2 cup julienne mango |
juice of 2 limes |
juice of 2 lemons |
1 or 2 mint leaves |
1 tablespoon soy sauce |
1 tablespoon vegetable oil |
1 tablespoon honey |
salt and black pepper to taste |
1 pound arugula |
1/4 pound snow peas |
(optional) tortillas or lavosh |
Directions:
1. Combine all but chicken breast, arugula and snow peas 2. Reserving 1/4 cup of sauce, pour over chicken. 3. Combine arugula and snow peas and pour reserved 1/4 cup sauce over. 4. Combine salad and chicken. Chill. 5. Serve as salad or wrapped in tortilla or lavosh. |
