This is a moist, flourless cake that I am just itching to try. Ingredients:
2 mangoes, peeled |
2 cups ground almonds |
1/2 cup sugar |
5 eggs |
1 teaspoon baking powder |
Directions:
1. Puree mangoes till smooth and you have about 2 cups of puree. 2. Place almonds, sugar and baking powder into food processor. 3. Combine well then pour in puree, blend well. 4. Add eggs one at a time. 5. Pour batter into greased 20 cm cake tin. 6. Bake 180 C for 1 hour. 7. Cool in tin for 10 minutes. |
