Found this in the hunt for recipes to use mango abundance in my yard. This is great on grilled fish. Ingredients:
1 lb butter |
1 3/4 cups mangoes, 1/4 inch dice (barely ripe) |
1/4 cup green onion, fine dice |
1/4 cup black pepper, fresh ground |
Directions:
1. Whip butter to soft texture. 2. Fold in everything else. 3. Roll to 1 3/4 rolls in wax or parchment paper. 4. Refrigerate at least 1 1/2 hours before using. |
