Ingredients:
2 cups all-purpose flour |
1 1/2 cups sugar |
2 teaspoons baking soda |
2 teaspoons ground cinnamon |
1/2 teaspoon salt |
3 large eggs, lightly beaten |
1 cup vegetable oil |
2 teaspoons vanilla extract |
2 cups chopped mango |
1/2 cup raisins |
1/2 cup sweetened flaked coconut |
1/2 cup chopped walnuts |
Directions:
1. Stir together first 5 ingredients in a large bowl. 2. Whisk together eggs, oil, and vanilla; gradually add egg mixture to flour mixture, stirring just until moistened. Stir in mango and remaining ingredients. Pour mango mixture evenly into 2 lightly greased 8- x 4-inch loaf pans. 3. Bake at 350° for 50 minutes or until a wooden pick inserted in center comes out clean. Cool completely. |
