Ingredients:
2 cups flour
2 tsp cinnamon
2 tsp baking soda
1-1/2 cups sugar
1/2 tsp salt
3 eggs, slightly beaten
1 tsp vanilla
1 cup salad oil
2 cups mango, diced
1/2 cup walnuts, chopped
1/2 cup coconut
1/2 cup raisins
Directions:
1. Sift together the flour, cinnamon, baking soda, sugar and salt. Add the flour mixture to the rest of the ingredients which have been well mixed. Lightly butter 4 loaf pans(2-1/2 x 5 ) Pour in the batter to 3/4ths full and bake for 55 minutes at 350 degrees. Cool and serve or wrap in foil and freeze.
