A traditional mango nut loaf with coconut and flavored with cinnamon. This is from A Hundred Years of Island Cooking , an old cookbook from the Hawaiian Electric Company. Ingredients:
2 cups flour |
2 teaspoons baking soda |
2 teaspoons ground cinnamon |
1 1/4 cups sugar |
1/2 cup shredded coconut |
1/2 cup chopped nuts |
2 cups chopped mangoes |
3/4 cup oil |
3 eggs, beaten |
2 teaspoons vanilla |
Directions:
1. Preheat oven to 350°F Grease a 9x5x3-inch loaf pan. 2. Sift flour with baking soda and cinnamon into mixing bowl. Stir in sugar, coconut and nuts. 3. Add remaining ingredients and mix well. 4. Pour into prepared pan and bake for 1 hour and 15 minutes or until done. |
