Mango Black Bean Salsa Ingredients:
1 (15 ounce) can black beans, rinsed and drained |
1 (15 ounce) can corn, whole kernel corn with bell peppers, drained |
1 large tomato, seeded and diced |
1 medium mango, peeled, seeded and diced |
1/4 cup onion, chopped |
1/4 cup fresh cilantro, coarsley chopped |
1/4 cup olive oil |
2 tablespoons fresh lime juice |
1 teaspoon garlic powder |
1/2 teaspoon salt |
1/4 teaspoon ground cumin |
Directions:
1. In a medium bowl, combine black beans, corn, tomato, mango, onion, cilantro, olive oil, lime juice, garlic powder, and salt. 2. Serve with baked tortilla or pita chips. |
