Mango Black Bean Green Onion Salsa |

This may not sound great but it tastes great. Ingredients:
2 mangoes, peeled and coarsely chopped |
1 cup cooked black beans, or canned beans, rinsed and drained |
2 green onions, finely sliced |
1 tbsp serrano pepper, seeded and finely diced |
1/4 cup fresh lime juice |
2 tbsp olive oil |
2 tbsp honey |
1/4 cup chopped cilantro |
salt |
fresh ground pepper |
Directions:
1. Combine all ingredients in bowl and season with salt and pepper. Let sit for 30 minutes before serving. |
