Mango and Feta Salad With Fresh Basil |

A sweet / tangy / savory side dish. This is a just a great quick easy salad. Ingredients:
2 mangoes, peeled and cut into bite size pieces |
1/2 cup crumbled feta cheese |
2 tablespoons olive oil |
2 teaspoons fresh basil, chopped fine |
1 teaspoon minced basil |
salt |
pepper (i like lots of pepper on mine) |
Directions:
1. Simple - just toss everything together and chill slightly before serving. Nothing more. 2. Grilled chicken or fish make an excellent main course for this salad. |
