Mango and Black Bean Salad |

Ingredients:
1/4 cup(s) extra-virgin olive oil |
2 tablespoon(s) cider vinegar (or lime juice) |
1/4 cup(s) cilantro chopped |
1 can(s) 15.5 oz black beans |
1/2 mango (1 cup) diced 1/2 inch |
1/2 apple (2 cups) diced 1/2 inch |
1/4 cup(s) scallions/red onions sliced |
Directions:
1. Whisk the olive oil, vinegar and/or lime, and cilantro together in a large bowl until blended. Season lightly with salt and pepper. Add the beans, mango, jicama (or apple), and scallion/onion and toss gently to coat with the dressing. Season with salt and pepper, to taste. Serve right away or let stand at room temperature for up to 30 minutes. Toss and check the seasoning before serving. |
