An Eastern European Jewish cookie similar to Italian Biscotti.. Made with almonds it's called mandel bread. Made with walnuts, it's called k'mish bread Ingredients:
3 eggs |
1 cup plus 2 tsp. sugar, divided |
1 cup vegetable oil |
1 tsp. vanilla |
2 tsp. lemon juice |
3 cups all purpose flour |
1/2 tsp. baking powder |
1/4 tsp. salt |
1 cup chopped nuts (any nut is fine but i prefer almond or walnut) |
1/2 tsp cinnamon |
Directions:
1. Preheat oven to 375 2. Mix together, cinnamon and and 2 tsp. sugar, set aside 3. Beat together eggs and 1 cup sugar until well blended 4. Slowly beat in oil, vanilla, and lemon juice 5. Sift flour, baking powder, and salt into a mixing bowl 6. Slowly add flour mixture into egg mixture beating at low speed 7. Stir in nuts 8. Coat 3 loaf pans with cooking spray 9. Divide batter among all 3 pans 10. Bake for about 17 minutes or until batter pulls away from pan and feels done 11. Reduce oven heat to 250 12. Let cool for 10 minutes or so 13. Remove cookies from pans and slice 1/2 inch thick 14. Put cookies on baking sheet single layered 15. Sprinkle sugar and cinnamon over cookies 16. Bake in oven for 10 minutes |
