What makes this salad is the dressing which is a very simple vinaigrette made from items easily found in most pantries. It really compliments the salad ingredients. Ingredients:
2 tablespoons vegetable oil |
1 tablespoon rice vinegar |
1 teaspoon grainy mustard |
1 pinch salt |
1 pinch ground black pepper |
4 cups baby spinach leaves |
1/2 cup bean sprouts |
1/4 cup almonds, sliced (optional) |
3 radishes, thinly sliced |
1 green onion, sliced |
1 (284 ml) can mandarin orange sections, drained and patted dry |
Directions:
1. In a large bowl, whisk together the oil, vinegar, mustard, salt and pepper. 2. Add the spinach, bean sprouts, almonds (if using), radishes, green onion and oranges. 3. Toss to combine. |
