Mandarin Orange Vinaigrette |

This vinaigrette is delightfully different, and goes together in 5 minutes. This came from Cheap Fast Good! I have not tried this, just posting for safe keeping. Ingredients:
8 ounces mandarin oranges |
1/4 cup red wine vinegar or 1/4 cup cider vinegar |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
1 tablespoon honey |
2/3 cup vegetable oil |
Directions:
1. Drain the oranges and put them in a blender or food processor. Add the vinegar, salt, and black pepper. With the motor running, add the honey and oil in a thin stream through the feed tube. Process until thoroughly blended. 2. Serve at once or cover and refrigerate until ready to serve, up to 2 weeks. (If the dressing separates while standing, shake it well to recombine before serving). |
