This is a tasty salad for either a light lunch or for a side with grilled chicken or fish Ingredients:
1/2 cup sliced almonds |
1 tbsp plus 1 tsp sugar |
1/2 head lettuce |
2 stalks celery, chopped |
2 green onions, sliced |
1 can mandarin oranges, drained |
dressing |
1/4 cup oil |
1/4 cup sugar |
2 tbsp vinegar |
1 tbsp chopped fresh parsley |
1/2 tsp salt |
dash pepper |
dash hot sauce |
Directions:
1. MIx almonds and sugar in small skillet 2. Cook over low heat in pan stirring constantly until sugar is melted and almonds are coated. 3. Cool and break apart 4. Tear salad greens into bite size pieces and place in a large plastic bag 5. Add chopped celery, green onions and mandarin oranges 6. Combine dressing ingredients in a tightly covered jar 7. Shake well and pour over greens in bag 8. Shake well again 9. Add almonds just before serving |
