Mandarin Orange Pound Cake |

A beautiful cake, moist with mandarin oranges, chocolate chips. I like the flavors of the orange and choclate together. Will post a photo of this soon I hope. Ingredients:
250 g butter or margarine |
250 g sugar |
1 pkg vanilla sugar or 1 to 2 tsp vanilla |
4 eggs |
500 g flour |
1 pkg baking powder or 2 tsp |
3 tbs chocolate chips |
2 cans mandarin oranges, drain , reserve juice and coarse chop the oranges if they are too large |
powdered sugar for glaze |
Directions:
1. cream butter and sugar 2. add eggs one at a time 3. Combine dry ingredients gradually by hand with wooden spoon 4. stir in the chocolate chips 5. Add the mandarin oranges minus 4 Tbs of the juice ( reserve for icing ) 6. Place in pan( tube or bundt ) bake 180C 60 to 70 minutes or tested done 7. Cool 15 minutes in pan before removing 8. When cold dust with powdered glaze made by mxining reserved mandarin orange juice and powdered sugar 9. Freezes well |
