MANDARIN MARBLE LOAF This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stewart Estate in Quinlan, Texas in 1994.
Ingredients:
4 tablespoons unsweetened cocoa powder
3 tablespoons warm vegetable oil
cake
1 cup vegetable oil
2-1/4 cups granulated sugar
5 eggs
4 teaspoons vanilla extract
1/4 cup water
1 cup undiluted frozen orange juice defrosted
zest of 1 orange finely minced
3-1/4 cups all purpose flour
1/2 teaspoon baking soda
3-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup finely grated semisweet chocolate
topping
1 cup confectioners' sugar
6 tablespoons orange juice
long shreds of orange zest
Directions:
1. Preheat oven to 350 then generally grease 2 loaf pans and line bottom with parchment paper.
2. Prepare chocolate paste by placing cocoa and oil in a small bowl and blending well.
3. Add a drop or more of oil if mixture appears too stiff or thick to stir or blend easily.
4. For cake blend oil with sugar until light and fluffy scraping bowl often.
5. Blend in the eggs and stir in the vanilla, water, orange juice and zest.
6. In a separate bowl whisk together flour, soda, baking powder and salt.
7. Add to wet ingredients then remove one third of the batter to a small bowl.
8. Stir chocolate paste into this to make a chocolate batter and add grated chocolate.
9. Spoon alternating portions of batters into prepared pan then bake 40 minutes.
10. Cool in the pan 20 minutes before inverting onto a wire rack.
11. Stir together confectioners' sugar and orange juice to make a thick but pourable sauce.
12. Drizzle this over top of loaves then garnish with zest.
