Quick and colorful! Ingredients:
1/4 cup sugar |
2 teaspoons cornstarch |
1/4 cup lemon juice |
2 tablespoons butter |
2 (15 ounce) cans sliced beets, drained |
1 (11 ounce) can mandarin oranges, drained |
Directions:
1. In a large saucepan, combine the sugar and cornstarch. 2. Add the lemon juice and butter. 3. Bring to a boil; cook and stir for 2 minutes or until thickened. 4. Stir in the beets; heats through. 5. Gently stir in the oranges (Gently! Or the oranges will turn red!); heat through. |
