4- eggs |
3/4- cup caster sugar |
2- tablespoons plain flour |
1/3 - cup self rising flour |
1/2- cup custard powder |
1/3- cup ground almonds |
2- tablespoons finely grated mandarin rind |

3- egg yolks |
1/2 - cup caster sugar |
3- tablespoons corn flour |
2- tablespoons cointreau |
1 - cup evaporated milk |
1/3 - cup double cream ..whipped |
3/4 - cup melted apricot jam |
topping |
1- cup double cream .whipped |
3/4- cup canned mandarin segments drained |
Directions:
1. Beat eggs with a mixer until thick 2. Gradually add sugar and beat for a further 3 minutes. 3. Fold in combined plain flour, self rising flour, custard powder, almonds and rind. 4. Pour mixture into a greased and lined 8 3/4 inch ( 22cm) round cake pan…………. 5. Bake in a moderate oven 350 degrees - for 30 minutes…… 6. Turn onto a wire rack to cool completely……. 7. To make the filling………. 8. Combine egg yolks, caster sugar,cornflour and cointreau in a medium saucepan, gradually stir in evaporated milk……..stir until filling boils and thickens. 9. Cool to room temperture, stir in whipped cream until combined….. 10. Cut cake into 3 layers 11. Spread layers with apricot jam , then sandwich with the filling and cover sides and top of cake with whipped cream 12. Decorate with the mandarin orange segments.. 13. Serves 8 |
