Ingredients:
1/2 cup(s) (1 stick) butter, divided use |
1 cup(s) self-rising flour |
1/2 cup(s) white sugar |
1 1/4 cup(s) light brown sugar, divided use |
3/4 cup(s) 1 percent milk |
2 cup(s) mandarin orange pieces, drained |
cinnamon sugar, to taste |
1 cup(s) pecans |
1 teaspoon(s) orange extract |
pastry cutouts for garnish, optional |
Directions:
1. Heat oven to 325 degrees. Melt 1/4 cup of the butter in the baking dish. In a bowl, blend flour, white sugar, 1/4 cup of the brown sugar, milk and extract. Pour batter in dish over the butter. Bake for about 5 minutes. 2. Sprinkle oranges on top of batter. Do not stir. Bake for 45 minutes. 3. Crush pecans by hand and sprinkle on top of cobbler with remaining 1 cup of brown sugar. Sprinkle a few tablespoons of cinnamon sugar, to taste, over top then drizzle with remaining 1/4 cup melted butter. Return to oven and bake 15 minutes. If desired, cut out orange or other decorative shapes of store-bought pie crust, bake until golden brown and use to garnish cobbler. Serve with ice cream if desired. |
