From my personal Thanksgiving recipes. Manchego is a Spanish cheese with a nutty, mild yet slightly salty flavor, excellent used in a variety of dishes. Hope you enjoy my recipe. Any reliable mashing potato may be used but the buttery yellow color of these yellow ones is eye candy! Read more ! Ingredients:
5 lbs yellow potatoes ( ex: yukon gold ) |
1 stick butter or margarine |
3 cups shredded manchego cheese |
dash nutmeg |
salt and pepper to taste |
Directions:
1. Cook potatoes by favorite method 2. Mash while hot enough to handle 3. Stir in the butter to melt, then the cheese 4. Taste for saltiness, adjust as needed 5. Add some pepper and nutmeg to taste |
