Man Pleasin' Cornbread Muffins |

My husband has never liked cornbread. I am a woman who aims to please her man (they say the way to a man's heart is through his stomach, right?) so I played cornbread baker for a good, long time...until I heard the words, This is the best cornbread I've ever had! Then I knew I hit the nail on the head, and had created the tastiest, fluffiest, and moist cornbread, that could please even the pickiest, cornbread eater (my husband). Ingredients:
3/4 cup cornmeal (stick in the food processor for a minute to get it super fine) |
1 1/2 cups cake flour (or regular, white...in the food processor for a minute) |
2 1/4 teaspoons baking powder |
1/2 cup white sugar |
1/2 cup plain yogurt (whole milk is best) |
1/3 cup real butter, softened (i use unsalted) |
2 large eggs |
3/4 cup milk (whole is best) |
Directions:
1. Pre-heat oven to 350 degrees. 2. Blend your wet ingredients. 3. Blend dry ingredients, then add to wet. 4. Grease a 12 muffin pan and fill 2/3 full approximately. 5. Bake 20-25 minutes, or until a toothpick comes out clean. 6. Enjoy with butter and honey, or enjoy them like I do - plain :-). |
