Mammaw's Chicken Casserole |

Makes 1 deep 9x13 dish or 3 shallow 8x8 dishes. Ingredients:
3 chicken breasts (skinless and boneless) |
1 cup uncooked macaroni |
1 (10 ounce) can cream of mushroom soup |
2 (10 ounce) cans cream of chicken soup |
8 ounces sour cream |
10 ounces shredded cheddar cheese |
1 (15 ounce) can drained peas |
1 (15 ounce) can drained corn |
Directions:
1. Preheat oven to 350 degrees. 2. Boil chicken in water, cool, and cube. 3. Cook macaroni according to the package, (until tender). 4. Crumble Ritz Crackers in the bottom of your pan(s). ( I like to leave big chunks). 5. Mix soups and sour cream in a large bowl. 6. Add in chicken, macaroni, peas, corn, and 1/2 package of cheese. 7. Pour into cracker lined pans. 8. Bake for aprox 20-30 min until mixture boils 9. Remove and cover with remaining cheese. Return to oven until cheese is melted. 10. Remove again, cool 5 min, serve. |
