My sister has been after me to post this recipe so I guess I am doing this mostly for her but maybe some of you other fine cooks might like it as well. Mamma never used measurements when she made these biscuits but she taught me to make them many many years ago and these approximate measures. Read more . I made them to this exact measurement so it is good. I used her words as she told me and I remember them well.
Ingredients:
1/4 tsp. baking soda
2 c. flour
1/4 to 1/2 c lard (we use shortening these days)
1 c. buttermilk
Directions:
1. Preheat oven to 450° F. (Back then it was a wood stove in the winter but Daddy got him an extra job so he could buy Mamma an electric stove to use in the summer time.
2. Stir baking soda into flour and mix well.
3. Mix shortening into the flour using your clean fingers until it kind of looks like little bitty gravels (coarse crumbs).
4. Add buttermilk and stir with them clean fingers until you get a soft dough.
5. Put out onto a floured counter top and push around (knead) easy about 10 times.
6. Roll dough to about a half inch thick with this rollin pin and cut into circles with the top of a jelly jar (about a 2 inch cookie cutter).
7. Place biscuits, just barely touching each other in a biscuit pan with no lard spread on it (ungreased pan).
8. Bake 10 to 12 minutes or til they are nice and pretty (golden brown).
9. Makes 12 to 14 biscuits.
