Saw a local news show where the cook baked a pizza crust then cut it up for croutons...I thought it would be cool to top the crust with the salad and dressing...kind of like and open faced veggie sub. This is the ingredients in the original salad. Read more . I added the Creamy Garlic n Green Olive Dressing. Use your favorite salad fixins and dressing! Ingredients:
1 (16 ounce) italian cheese-flavored pizza crust (such as boboli) |
2 cups torn romaine lettuce, spinach, or spring mix greens |
1 cup cherry or grape tomatoes, halved |
1/2 cup thinly sliced red onions |
1 small cucumber, halved lengthwise, thinly sliced |
1 (15 ounce) can dark red kidney beans, rinsed and drained |
1 (7 ounce) bottle roasted red peppers, drained and chopped |
1 (3-4 ounce) package feta cheese crumbled (may substitute shredded mozzarella) |
1 (3 ounce) package pepperoni slices |
**creamy garlic & green olive salad dressing |
1/2 cup cider vinegar |
1/2 cup water |
1 cup mayonnaise |
4 cloves garlic |
1/4 cup sugar |
dash of crushed red pepper |
1 cup green olives, pitted and drained, or pimiento stuffed olives, drained |
Directions:
1. Preheat oven to 450 degrees. 2. Place pizza crust on baking sheet and bake at 450 for 8 minutes. 3. While crust bakes, combine lettuce, tomatoes, onions, cucumber, beans, peppers, cheese, and pepperoni slices in a large bowl. Toss to combine. 4. Allow crust to cool to warm, or room temp. 5. Top with tossed salad and dressing 6. **Creamy Garlic and Green Olive Salad Dressing** 7. Combine all except olives in blender or food processor and blend until smooth. Add olives all at once, and process just until chopped. It should be a bit chunky. |
