This stew is chock-full of flavorful summer produce with a hint of heat from hot Italian sausage. Ingredients:
1 pound hot italian sausage, cooked and drained |
1 eggplant, peeled and cubed |
1 1/2 cups sliced green beans |
2 green peppers, sliced |
1 to 2 potatoes, peeled and cubed |
1 zucchini, cubed |
1 yellow squash, cubed |
1 cup onion, thinly sliced |
15-oz. can italian-style tomato sauce |
1/4 cup olive oil |
2 teaspoons garlic, minced |
1 teaspoon salt |
Directions:
1. Combine all ingredients in a 7-quart slow cooker; stir well. Cover and cook on low setting 8 hours or on high setting 4 hours. |
