This is great on a cold day. It goes really well with crusty bread. It's my favorite winter soup Ingredients:
2 tblspns olive oil |
1 clove garlic |
dash red pepper flakes |
1 can chopped tomatoes (with juice) |
1 can chicken stock (or vegetable stock) |
1 small head of broccoli |
1 can cannellini beans |
1/2 lb of italian sausage |
1/4 cup red wine (optional) |
small pasta (elbow, farfalle, shells, etc.) |
salt and pepper to taste |
pecorino romano or parmesan cheese |
*if you don't like broccoli, you can easily substitute spinach or escarole or some other green leafy veggie if you like |
**great white northern beans can be substituted for cannelini beans |
Directions:
1. Heat olive oil in large saucepan. 2. Once oil is hot brown garlic and red pepper in olive oil 3. Add sausage and brown. 4. Add chicken stock, tomatoes and juice and red wine bring to a boil and lower heat. Simmer about 15 - 20 minutes 5. Bring a small pot of salted water to a boil. Add pasta and cook until al dente. 6. At the same time that you put the pasta in the boiling water, add broccoli and beans and heat through or until broccoli is tender. Add salt and pepper to taste. 7. Put pasta in individual bowls and spoon the soup over top. Sprinkle with cheese if desired. Serve with warm crusty bread. |
