I grew up on the Texas/Mexico border so my mother learned how to make excellent Mexican dishes. This is her Spanish rice recipe and it is so yummy. I can eat this alone as a meal! Ingredients:
1 cup white rice, whole grain (not instant) |
1 small onion, diced |
1/4 cup cooking oil |
1 (14 1/2 ounce) can diced tomatoes |
1 teaspoon salt |
1/4 teaspoon pepper |
1 teaspoon cumin |
1 cup water |
Directions:
1. Brown rice in oil on medium heat. 2. Add onion and saute'. 3. When rice is brown add canned tomatoes, salt, pepper, cumin, and water. 4. Stir and bring to a boil. 5. Cover and reduce heat to a simmer. 6. Cook on low heat for 15 minutes or until rice is done. |
