This dish puts some Southern flare into the meal. My grandma used to make this and it goes with anything you serve. Ingredients:
4 cups fresh or frozen corn |
3 eggs beaten |
1 cup milk |
1 cup crushed crackers, (approx 30 saltines), divided |
3 tblsp. butter or margarine, melted |
1 tblsp. sugar (or you can use artificial sweetner) |
1 tblsp. finely chopped onion |
salt and pepper to taste |
Directions:
1. In a large bowl combine corn, eggs, milk, 3/4 cup of the crackers, butter, 2. sugar, onion, salt and pepper. 3. Transfer to a greased 1 1/2 quart baking dish. 4. Sprinkle the top with the remianing crackers. 5. Bake uncovered for 1 hour at 325 degrees or until done. 6. If you put a knife in the middle of it and it comes out clean, it's done. |
