Shellie Fellers, Owner Evelyn's Bakery Oak Ridge Ingredients:
1/2 cup all-purpose flour |
3/4 cup oil |
3/4 teaspoon baking soda |
3 tablespoons buttermilk |
1/4 teaspoon salt |
3 large bananas, mashed (about 1 cup) |
1 cup white sugar |
1/2 cup chopped pecans |
2 eggs, lightly beaten |
1 teaspoon cinnamon |
1 teaspoon baking powder |
Directions:
1. Preheat oven to 325°F. 2. Grease and flour an 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan; set aside. 3. Sift together flour, soda, baking powder, cinnamon and salt. 4. Add sugar, oil and buttermilk; stir to blend. 5. Fold in bananas and nuts. 6. Pour into prepared dish. 7. Bake 1 hour 10 minutes. 8. Makes one 2-lb loaf. 9. *I also add a powdered sugar glaze over the top to make a prettier presentation. 10. Just a tad bit of water, maybe 2 TBSP, mixed with about 3/4 cup of powdered sugar. |
