Ingredients:
3 1/2 pounds red potatoes, cut into 1/2-inch cubes |
8 hard-cooked eggs, coarsely chopped |
1/4 cup minced celery |
1/4 cup finely chopped green onions |
2 tablespoons chopped italian parsley |
1 1/2 teaspoons salt |
1/4 teaspoon freshly ground pepper |
homemade mayonnaise |
Directions:
1. Boil potatoes in salted water to cover 10 minutes or until tender; drain and cool. Combine potatoes and remaining ingredients in a large bowl; toss gently. 2. Note: You may substitute prepared mayonnaise. |
