Ingredients:
1 1/2 cups uncooked rice |
1 cup raisins |
1 1/2 cups evaporated milk |
1 1/2 cups water |
1 stick butter or margarine |
3 tbls. flour |
1/2 - 15 oz. can crushed pineapple (optional) |
3 cups sugar |
1 tsp. vanilla |
1/4 tsp. ground cinnamon |
1/8 tsp. ground nutmeg |
1/8 tsp. ground cloves |
Directions:
1. Cook rice and raisins until done and fluffy. Cooking the raisins in with the rice will plump the raisins and make them softer. Set aside. Combine milk and water in a bowl or pitcher. In a skillet, melt the butter and mix in flour, stir to cook the flour and give it a nutty flavor, don't over brown though, the flour will burn quickly, pour in the milk and water mixture. Stir until thickened, pour in to the rice and raisins, mix really well. Add the sugar, spices, and Pineapple. Mix well. Serve hot or cold with Batter Fried Pork Chops, Fried Yampples (Fried Apples and Yams), and Cornbread Stuffing. |
