Mama's Rice and Zucchini Casserole

This was Summer food at our house growing up. Comforting and delicious!!!! The recipe card was used so much that the ink is blurred.
Ingredients:
2 lbs zucchini
1/3 cup chopped parsley
1 cup uncooked rice
3 beaten eggs
1 cup grated cheddar cheese
1/3 cup melted butter
1/2 cup sliced onion
1 teaspoon rosemary
1 teaspoon garlic powder
1/2 teaspoon accent seasoning (optional)
salt and pepper
paprika
Directions:
1. Cook the rice as per package instructions.
2. Parboil the zucchini for 15 minutes, cool and chop.
3. Mix all the ingredients together and sprinkle with paprika.
4. Bake at 350 for 1 hours.
