This is the potato salad of my childhood. Even though I've eaten others, this is the one I come back to for comfort food. Ingredients:
7 medium potatoes, peeled,cooked in boiling salted water until tender,then cubed |
4 slices bacon, cooked crisp then crumbled |
2 stalks celery, chopped fine |
1/2 vidalia onion, chopped fine |
3 hard-boiled eggs, chopped |
1/2 cup mayonnaise |
2 tablespoons apple cider vinegar |
1/2 teaspoon dry mustard |
1 1/2 tablespoons sweet pickle relish |
1/2 teaspoon kosher salt |
fresh black pepper |
Directions:
1. Place the potatoes, bacon, celery, onion and eggs in a large bowl. 2. Mix the remaining ingredients together and pour over the potatoes, tossing lightly. 3. Taste, adjust seasonings if needed, then chill until service. |
