This has a really cool flavor and texture. Super delicious! You can sub the salad oil for 1 cup applesauce too to make it even more moist and healthier! Ingredients:
2 cups flour |
2 teaspoons cinnamon |
2 teaspoons baking soda |
1 1/2 cups sugar |
1/2 teaspoon salt |
3 eggs, slightly beaten |
1 teaspoon vanilla |
1 cup salad oil |
2 cups mangoes, diced (not too ripe or stringy) |
1/2 cup walnuts, chopped |
1/2 cup coconut, fresh or frozen |
1/2 cup raisins |
Directions:
1. Preheat oven to 350 degrees. 2. In a mixing bowl combine first 5 ingredients. 3. To them, add all remaining ingredients. 4. Grease 2 large loaf pans and bake for 55-60 minutes or until a toothpick (or fork) poked into the center comes out clean. |
