In my southern family,unless it's sandwich night you do NOT serve sandwich bread with dinner. That is a sin punishable by banishment from the table,the kitchen,and in some cases the house. Hot biscuits,rolls,or cornbread fresh from the oven is a requirement. Read more . Biscuits is where my mom excelled. This is her recipe. Ingredients:
2 cups self rising flour |
1/2 cup vegetable shortening or lard |
3/4 cup buttermilk |
1 stick butter-melted |
Directions:
1. Preheat oven to 400 degrees. 2. Sift flour into a large mixing bowl. 3. Cut shortening into flour using a fork or pastry cutter until mixture resembles coarse crumbs. 4. Stir in buttermilk. If dough is too dry,add more buttermilk. If dough is too wet,add more flour. 5. Knead dough for 1 minute then turn out onto floured surface. 6. Roll out to 1/2 thickness and cut with biscuit cutter(use the size of your choice). 7. Place biscuits on a lightly greased baking sheet. Brush with melted butter. 8. Bake on center rack for 15 minutes or until golden brown. 9. Brush with additional butter and serve hot. 10. Suggestions: 11. Instead of self rising flour,combine two cups all-purpose flour,1 teaspoon baking powder,1 teaspoon baking soda,and 1/2 teaspoon salt. Bake as directed. 12. If you don't have buttermilk,use 1 tablespoon vinegar or lemon juice and add enough milk to make 3/4 cup. This recipe also works with plain whole milk. |
