This sandwich is one of the best of both world when I was growing up.
Ingredients:
pimento cheese
16 oz shredded sharpe chedder cheese
8 oz soft cream cheese
1 large jar of pimento
1 teaspoon of cayenne pepper
salt and pepper
fried green tomato
1 large green tomato
1/2 cup flour
1 tsp ground pepper
1/2 cup cooking oil
Directions:
1. Pimento Cheese
2. mix the cheeses together in a large bowl
3. drain and add the pimentos and mix together
4. add the cayenne pepper
5. then salt and pepper to taste
6. Fried Green Tomato
7. in a small or med size frying pan pour the oil in it and place on stove at a med heat , this what you are going to fry the tomatos in
8. slice the tomato into about 1/8 inch thick slices
9. place into a bowl and spinkle a little salt over them and sit aside
10. in a small shallow dish mix the pepper and flour together
11. dredge the tomato slices in the flour mix , cover both sides goob
12. place in the frying pan cook them till brown on both sides
13. Sandwich
14. spread an thin layer of pimento cheese on 2 slices of wheat or white sandwich bread, then place the fried green tomato's on one of the slices and place the other slice of bread on top and grill for about a minute in a frying like you would make a grilled cheese sandwich
