Ready, Set, Cook! Special Edition Contest Entry: These cheesy sinful (Malvada) potaotes are a hit every time I serve them. They are perfect with beef, chicken, pork and even fish. This recipe was one of the first recipes I put in my cookbook over 30 years ago and is still a hit every time. Enjoy!
Ingredients:
1 (20 ounce) package simply potatoes diced potatoes with onion
1 cup cream of chicken soup
1 cup goat cheese (crumbled)
1 cup monterey jack pepper cheese (grated)
1 cup sour cream
1/2 cup fresh green onion (sliced)
1/2 cup fresh cilantro leaves
1/2 cup cooked bacon (crumbled)
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter (melted)
1 cup corn flakes (crushed)
Directions:
1. In a large bowl combine cream of chicken soup, goat cheese, pepper jack cheese, sour cream, scallions, cilantro, bacon, salt and pepper. Mix well.
2. Add potatoes with onions to ingredients and mix well coating potatoes completely.
3. Pour potatoe mixture into a casserole dish coated with non-stick spray.
4. Combine melted butter and crushed corn flakes to make a crumbly topping.
5. Top potatoes with topping and bake. 1 hour at 350.
