A restaurant near my house started serving this, and it was so yummy, I had to ask what was in it! This makes a great veggie side, and with the cheese, kids will eat it without asking questions. Depending on your taste, you can use regular sour cream, light sour cream, or butter. Ingredients:
1 head cauliflower |
1 cup shredded sharp cheddar cheese |
2 tablespoons light sour cream |
salt |
Directions:
1. Cut cauliflower into chunks and steam or boil until until it is very, very soft. 2. Drain water. 3. Use a potato masher to mash the cauliflower until it is fairly smooth (You can use a blender or food processor to get a very smooth result, but I like to keep a little texture). 4. Add cheese, sour cream, and salt to taste. |
