Remember Mallo Cups? They were a favorite of mine growing up. A friend sent this along to me and they are the next best thing Ingredients:
1 stick butter, softened |
1 cup sugar |
1 egg |
1/2 cup milk |
1 tsp. vanilla |
1 3/4 cups flour |
1/2 cup cocoa |
1/2 tsp. baking soda |
1/2 tsp. salt |
1 cup flaked coconut |
18-22 large marshmallows, halved |
frosting |
4 tbls. butter |
2 squares unsweetened chocolate |
2 cups powdered sugar |
3-6 tbls. brewed coffee, cooled |
Directions:
1. Preheat oven to 375 2. In mixing bowl, cream butter and sugar. 3. Beat in egg, milk and vanilla until smooth 4. In another mixing bowl, add flour, cocoa, baking soda, and salt. 5. Gradually add to creamed mixture 6. Drop by rounded tablespoonful onto ungreased baking sheet 7. Bake for 6 minutes 8. Take out of oven 9. Press a marshmallow half into coconut 10. Press marshmallow into top of cookie 11. Return to oven for 2 minutes or until marshmallow melts 12. Cool on wire rack 13. Frosting 14. Melt chocolate and butter in microwave until smooth 15. Beat in powdered sugar 16. Add enough coffee to achieve spreading consistency 17. Put frosting into pastry bag and pipe over cookies |
