Delicioius as a side or on it's own. I like it room temp but cold is good too. The dressing can be tedious to put together, so I usually mix up a double (or trible batch) and save the rest in the fridge to add to the lentils and rice later. Ingredients:
dressing: 1/4 cup apple cider vinegar |
1/3 cup olive oil |
1 tsp dijon mustard |
1 tsp cumin |
1/2 tsp each of sugar, salt, coriander |
1/4 tsp each of tumeric, paprika, nutmeg and cardamum |
pinch of cinammon, cloves and cayenne |
2/3 cup cooked green lentils |
1/2 cup orzo pasta |
1/4 cup chopped red onion |
Directions:
1. Mix Dressing Ingredients 2. Chop onion 3. Mix onion, pasta and lentils with dressing 4. Refrigerate to allow flavours to meld. 5. Enjoy! |
