This is the best banana bread ever. Light and moist every single time without exception. I altered my great grandma's recipe to make it simple and totally easy for even the novice cook/baker. Ingredients:
1 stick butter (1/2 cup) must be butter, margarine doesn't work in this recipe. |
1 cup granulated sugar |
2 large eggs |
1 1/2 cups all purpose flour |
1 tsp. baking soda |
1 tsp. salt |
1 cup very ripe mashed bananas |
1/2 cup sour cream |
1 tsp. vanilla (real not imitation) |
1/2 cup chopped walnuts or pecans (optional) |
Directions:
1. Preheat oven to 350 degrees. Butter a 9 by 5 by 3 inch loaf pan; set aside. In a large bowl cream butter and sugar until light and fluffy. Add eggs and beat to incorporate. 2. In a medium bowl whisk together flour, baking soda and salt. Add to the butter mixture and mix until just combined. Add bananas, sour cream and vanilla, mix to continue. Stir in nuts if desired and pour into prepared pan. 3. Bake at 350 for one hour to one hour ten minutes or until a knife inserted in the center of the loaf comes our clean. 4. Allow pan to cool for ten minutes and then turn out onto wire rack or cutting board. Eat warm with butter or allow to cool before serving. 5. DESSERT SUGGESTION: If you want a quick and easy dessert for this bread, slice bread, top with your favorite ice cream and fresh fruit, drizzle with chocolate sauce, top with whipped cream ad voila - a quick, delicious and satisfying dessert for everyone. |
