Make Hash From Leftover Corned Beef |

After St. Patrick's Day (March 17th), we usually have lots of leftover corned beef and potatoes - we actually plan it that way. So for breakfast, we finely dice the cooked potatoes, dice the cooked corned beef and fry with diced fresh onions and mashed garlic. Read more . Dad taught me this many years ago. Ingredients:
1/2 lb corned beef (give or take) |
1/2 lb cooked potatoes (give or take) |
1 small diced onion |
1 clove garlic, mashed |
1 tablespoon olive oil |
Directions:
1. Dice the corned beef, cooked potatoes, raw onion and mash the garlic. 2. Fry the potatoes first with the onions and garlic for 5 -10 minutes over a medium heat. Purists will insist on using a cast iron pan as did my Dad, but I find the non-stick pans work just as well. 3. After the potatoes start to brown a bit, add the diced corned beef. 4. Fry for 5 minutes or more at the same heat. 5. Serve with either fried eggs or poached eggs on top although this is great just by itself. |
