Make Ahead Orange Coffee Cake |

You can mix the dough as much as 3 or 4 days ahead. Refrigerate until needed, then bake! Ingredients:
2 cups all purpose flour |
3 teaspoons baking powder |
1/2 teaspoon salt |
1/2 cup sugar |
1 teaspoon grated orange rind |
3/4 cup orange juice |
1 egg |
1 teaspoon vanilla |
1/4 cup vegetable oil |
topping |
2 tablespoons grated orange rind |
1/2 cup sugar |
1 teaspoon cinnamon |
Directions:
1. Preheat oven to 400 degrees F
2. Mix ingredients in order given and stir until well moistened
3. Pour into 10 inch cake pan
4. Mix topping ingredients together
5. Sprinkle topping over batter
6. Dot with 2 tablespoons butter
7. Bake in 400 degree oven for 20 - 30 minutes
