Make Ahead Meatball Salad |

A make ahead salad for a quick and easy dinner when it is too hot to cook. Ingredients:
1 lb ground beef |
1/2 cup breadcrumbs, seasoned |
1/2 cup italian salad dressing |
6 cups salad greens |
1 medium red onion, thinly sliced |
1 cup mozzarella cheese, shredded |
2 1/4 ounces sliced ripe olives |

Directions:
1. In a bowl combine beef and breadcrumbs. Shape into 3/4-inch balls. 2. Place in a greased 8-inch square baking pan. 3. Bake at 350F for 15 to 20 minutes or until meat is no longer pink. 4. Cool for 15-30 minutes. 5. Place Italian salad dressing in a resealable plastic bag; add meatballs. 6. Seal and refrigerate overnight. 7. Drain and discard marinade. 8. On a serving platter arrange greens, onion, cheese and olives. 9. Top with meatballs. 10. Drizzle with dressing. |
